This installation consists of balancing panels of puff pastry (40*60cm), erected like a pyramidal construction. People were invited to eat the construction ; as puff pastry is both structured and fragile, it has a fulcrum and happens to fall down.
The physical experience of construction and its fall embodies the culinary process of puff pastry: layers and folding.
